Some More Progress Made

So we really have continued to work. Thanks to a lovely donation from my Mom and Gary we have made real progress on the fence in the backyard. When I say we I really mean Shane he has spent a lot of time on it. We are 2/3's done at this point.

Time to Start on the Garden

So now that the house is basically done. I am not sure if a home is ever really complete but for now no major projects inside. I decided to start on the front yard. It is lacking in curb appeal... So I used the broken pieces of concrete chimney/vent to create a tiered flower bed. I guess I am going for an English garden feel. Sticking to purples, whites, reds, and some pinks, for color. Mason Jar Pot Pie

I have been working on ways to have healthy ready to eat food for our busy week.  I did what any computer literate person does Internet investigation.  I found information on mason jar cooking. My favorite idea was the chicken pot pie.  I looked at many recipes (mason jar and otherwise), and decided to wing it.  I can't remember the last time I had a pot pie.  I made chicken for Shane and vegan for me. Recipe: Makes 6 Chicken and 6 Vegan wide mouth half pint mason jar pies. Filing: 3 chicken thighs 1.5 c soy curls 1 c celery diced 1 c carrots diced 1 c onion diced 1 leek approx 1/2c chopped 1.5 cans coconut milk 22.5 oz 3 russet potatoes 2 tbls olive oil 2 tbls flour 1 tbls better than boullion no chickn base 1 tbls herbs de provance 1 tsp thyme 1 tsp white pepper Pinch of salt Fresh ground pepper to taste Because I am making this for two different diets I cook the chicken away from everything.  Boil chicken in salted water for 10 to 12 m...

A Broken Heart

On August 13th 2019... my heart broke. There have been many trying things that have happened in my life but on this day, so far the hardest day I lost my little man, Oliver. It's not that it came as a surprise. We had known for over 4 months he had cancer of his spine. The sadness had overwhelmed me during this time watching him deteriorate. The sadness in his eyes the last week could be unbearable. That is when I would just hold him. We spent the day together, we snuggled, he had some water and a little food. He cried any time I left the room even to get him water. He was happy when Shane got home. He wagged his tale. Shane sat with him about an hour later he crossed the rainbow bridge. Here is where I am. I cry every day. I try to hide it but mostly I function between sadness and anger.  I try to keep my head down and get my job done while at work.
